Golf Birthday



Masculine Birthday cards always seem harder to come up with than ones for women.  Here is one if you have a golfer in your life.  My stepfather is on the golf course a few times a week so this was quite appropriate.

Enchilada Pasta Casserole

Here is my latest kitchen creation.  All 5 of us loved it, which is always a major victory!  It has just a little bit of spice since the kids don't like things that are overly spicy.  This comes together fairly quickly which is always a good thing with our busy schedule this time of year.



Enchilada Pasta Casserole:

Indgredients:

1 lb. Ground Beef
1/2 teas. Chili Powder
1 cup Frozen Corn
8 oz. Block Cream Cheese
1/2 cup Sour Cream
1 can (10 oz.) Red Enchilada Sauce
2 cups Shredded Cheddar
1 can (4 oz.) Diced Green Chiles
12 oz. Egg Noodles

Preheat oven to 350 degrees
Cook egg noodles according to the package directions
Brown ground beef in a large skillet until no longer pink
Add in chili powder and frozen corn, stir to combine and thaw corn.
Add in cream cheese and stir until its melted
Once cream cheese is melted add in sour cream, red enchilada sauce, 1 cup of shredded cheddar, and green chiles.
Stir until combined really well.
Add in cooked egg noodles and stir until the pasta is coated with the mixture.
Transfer mixture to a 9 x 13 pan and top with remaining cheddar cheese
Bake for 15- 20 mins
Enjoy!

I made this with egg noodles but this would probably work with other pastas as well.

Cauliflower Casserole

For Easter I made a Cauliflower Gratin that did not turn out so well in my opinion.  However I knew what I wanted it to taste like so I started playing around with some ingredients and came up with this recipe which I loved!


1 large head of cauliflower
1 1/2 cups grated cheddar cheese
1 1/2 cups grated gruyere cheese
8 oz. block of cream cheese, softened
1/2 cup of heavy cream

Preheat oven to 350 degrees
Steam cauliflower until tender
While the cauliflower is steaming, mix together 1 cup of each cheese, the cream cheese and heavy cream.
When the cauliflower is done mix together with cheese mixture in a 9 x 13 pan
Top with remaining cheese
Bake for 20-25 mins
Enjoy!

More Spring

Here is another sample of using one of the stamps from Spring Sampler, it has so many cute stamps in it.  I combined it with one of the stamps from Ciao, Baby and they fit together nicely.  The new petite punches are my favorites from the Spring Catalog and SAB.  So glad they put the Petite Curly Label Punch for sale after SAB was over.  It's a great opportunity to buy the punch if it wasn't one of the items you picked during the sale.  I also love the bright color combo in this card!

Wood Mount Stamp Packaging Change

Introducing our new wood-mount stamp set packaging!

These new cases are similar to our clear-mount boxes and fit perfectly on the shelf right next to them. They also have the images and stamp set name on the spine to make your search for the right set even easier.

Starting May 31 all wood-mount sets will come in this new packaging (sneak peek sets will also be in the new boxes during the preorder). And empty cases will be available with the launch of the new catalog. That means you can transfer all your old sets to these new boxes! There will even be a template for you to create your own label for your old stamp sets (available May 31). Color Refresh

Do you dream in color? We do!

Announcing Stampin' Up's  Color Refresh! We love color and we know that you do too. Color is fundamental to who we are and what we offer. It's important for us to stay up-to-date with color trends so we are thrilled to share our updated line of colors, and hope you will be as excited as we are by the new possibilities!
Why now? In 2010 we did a big color renovation and shared our plans for smaller color refreshes every three to five years to keep our colors on trend. Well it has been three years and we are excited to announce that the upcoming 2013-2014 annual catalog will include 10 new colors (most of which are returning In Colors from previous years)! We are welcoming back some of your favorites, moving some colors around, and introducing one brand-new color, so take a look!

Sausage, Bean and Pasta Soup

We love soup in this house and this recipe I found on Pinterest has quickly become a favorite.  I double the original recipe and add a few tweaks but the original can be found here:
Sausage, Bean and Pasta Soup

Here is my version:

Sausage, Bean and Pasta Soup

2 15oz. cans of cannellini beans, drained
2 lbs ground sausage
1 onion diced
3 carrots diced
6 Tbls olive oil
4 garlic cloves put through a garlic press
2 14.5 oz cans of diced tomatoes
12 cups of chicken broth
2 teas. thyme
1 teas. salt
2 boxes ditalini pasta

In a large pot, brown the sausage.  When no longer pink, remove from pot and set aside.  Add olive oil into same pot then add in onions, carrots and garlic and let them cook together for 3-4 mins.  Add in tomatoes, chicken broth, thyme, salt, beans and sausage. Simmer for about 45 mins then add in pasta.  Cook until pasta is done, about 15 mins.

We served it with freshly grated parmesan cheese on top.

This makes a really big batch of soup but we all went back for seconds and will have it to bring to work for lunches this week.

Oh Whale!

One of my favorite stamp sets from the Spring Stampin' Up Catalog is Oh, Whale!   It has an adorable Clearlits Die and coordinating Designer Series Paper.  I found this layout on my new favorite site Pinterest and just changed up the colors to suit my liking.


 I love that we can color in the Rhinestone Basic Jewels with Sharpies to make them any color we need!
